IN THEIR OWN WORDS:

I started working in restaurants when I was a teenager. After college, I realized my true passion was for hospitality, and I decide to go all in and devote my life to the craft. I realized early on that I wanted to create my own path as an entrepreneur.

WHAT DOES A TYPICAL DAY LOOK LIKE FOR YOU?

Most days I start early with some kind of exercise. I have breakfast with my beautiful wife Jackie, my son Marlow and daughter Veda. Then I'm off to work. I race home to get some playtime in before family dinner. After the kids' bedtime, I either get a little more work done or chill with Jackie. Living the dream!

WHERE DO YOU FIND INSPIRATION?

I'm inspired by my bad ass wife who takes care of me and my children every single day! And I'm always amazed by the passion and dedication of the people I work with.

FAVORITE MEMORY IN THE KITCHEN?

My fondest memories go back to when Juan and I used to prep and serve every meal from our original food truck. It was a grueling time, but it taught me the most about who I am and what I want to be.

FAV RESTAURANT: Impossible question. Maybe Gjelina in Venice.

BIGGEST PIECE OF ADVICE EVER RECEIVED: From my neighbor who taught me how to paint: just be yourself, be present, be accepting.

WEIRDEST FOOD COMBO: My mom used to make various Chinese dishes and serve them to eat in a pita. Sounds weird but I loved it as a kid.
